Built around patisserie pumpkin, vanilla and baking spices, it leans sweet, lactonic and comforting.
At first, pumpkin arrives with Ceylon cinnamon, nutmeg and ginger. Brown sugar, butter, flaky pastry and whipped cream give an immediate impression of pudding just out of the oven.
Through the middle, the pumpkin-pie accord comes into focus: Madagascan vanilla and vanilla absolute, condensed milk and cream, joined by pecan nut, tonka bean, cinnamon and ginger.
