Excellent immortelle soliflore. Half gourmand, half oriental, opening with force and bravura: a cinnamonic aroma of fine cinnamon within this wonderful immortelle, smelling of dark, luxurious, and unique smoked sweet hay. As it dries, the layers assembling with the Mysore sandalwood core and balsams reveal all its splendour. A caramelised trail lasting more than a day. In the end, it’s a rich, opulent syrup of high quality and complexity. Perfect trail, impressive longevity. Would love to have Lutens or Amouage ‘Sables’ in my collection. Another great job from Goutal. Rating: 8
Spectacular from A.Goutal. Opens smoky and heavily spiced, fading quickly to reveal the ‘immortal’ flower, the immortelle. As @Gelo999 says, it starts rough and smoky before turning sweet and liqueur-like. Everything revolves around the immortelle: you either love it or hate it. In my case, I love it. Moderate sillage, but monstrous longevity, especially on clothes. Never spray it; the scent lingers even after washing the garment several times. A work of art!
If you don’t know immortelle, here’s its power. Annick Goutal created this for her husband, recalling a holiday on the ‘Isle of Beauty’, where she asked to recreate the scent of ‘sand dunes’ with immortelle and sea breeze. A dream journey, perfumed with warmth and natural spices… And so Sables was born. It’s a talisman that performs unique alchemy with your skin, becoming ‘all your own’ and revealing aromatic and spicy notes. It must be tried literally. It’s a 1985 scent that polarises opinions. After several tests with a sample, the opening surprises you in unknown territory. I’ve read theories about maple syrup, but after five minutes, what dominates is a warm, resinous amber with hot eternal flower. It’s dark, semi-sweet, and fantastically animalic. There’s a hint of smoked pepper floating in this eclectic stew that screams vintage. A vanilla-scented sandalwood emerges after an hour. This duo lasts a long time, with exceptional longevity and projection. It’s unusual; the more I smell it, the more I like it. Love it or hate it, I’ll buy it if the price is decent.
I wanted to try Sables because of its resemblance to Histoires de Parfums 1740, being cheaper. It has cinnamon and immortelle, but the longevity isn’t what I expected; 1740 does it better. I find this one from Annick more timid than the other, which is a more refined work of art. For those, I use decants. I like it, but I don’t love it; it’s less dense, and its trail and longevity are moderate.

I thought adding tea would bring more life to this Sables, but it smells a bit mature and old-fashioned. That immortelle reminds me of hay and is very prominent, blended with a dark, sweet amber base. It looks elegant and dashing, yet it’s not my style. Ideal for mild weather and slightly more masculine; it’s an olfactory experience, just not what I’m looking for. Rating: 6/10
